DRY AGED LONDON BROIL

The London Broil is an extremely lean cut of beef from the top round of the primal. The traditional London Broil is marinated and then broiled in the oven. You can also sear it and then cook it at a lower temperature.

Make sure that you cut against the grain after cooking into thin strips.
